Shape Up In 2018!

One easy weight loss trick I learned years ago is to eat at least 5 fruits/vegetables in a day. Think about a typical day for you. Do you sometimes get to the end of a day and have included few, if any, fruits or vegetables in your diet? When I realize that is happening to me, I have to re-evaluate my eating habits. Adding at least 5 servings is a healthy thing to do and it fills me up…so hopefully I won’t eat so many of the empty calorie snacks.

Here are some great reasons to start eating more fruits and vegetables:

  • Most vegetables and fruits are naturally low in fat and calories
  • Vegetables and fruits are important sources of many nutrients, including potassium, dietary fiber, folic acid, vitamin A, and vitamin C.
  • They are fiber-rich

Here is a great soup that my family loves. It makes a big pot so you have plenty. Serve it for a great lunch. Have a cup before a meal or even as a snack. Vary the vegetables according to your personal taste.

Great Vegetable Soup

2 Tablespoon olive oil
2 cups chopped onion
1 cup chopped celery
2 teaspoons Italian seasoning
Salt and Pepper to taste
3 14 1/2 oz cans chicken broth
1 28 oz can chopped tomatoes
1 Tablespoon tomato paste
3 Cups water
8 cups vegetables (pick your favorites–carrots, potatoes, corn, green beans, zucchini, peas, cabbage…)
Optional–I add 3 or 4 bouillon cubes and about 1 Tablespoon sugar)

Saute olive oil, onion, celery, and seasonings for 5-10 minutes. Add broth, tomatoes,  tomato paste and water and simmer uncovered for 20 minutes. Add veggies and simmer uncovered 25 minutes.
