Family Recipes: Awie’s Pineapple Upside Down Cake

Most of our family started calling my mom ‘Awie’ when my child was young and that was just what came out instead of grandma. She was always mom to me. She was one of the wisest and most compassionate people I have ever known—and she was a terrific cook.

I remember mom making this Pineapple Upside Down Cake so many times. She would sometimes make it in 3 round pans and it was beautiful all stacked up, but I love the ease of putting it in a 13×9 pan. It starts with a yellow cake mix (any kind) so getting it ready for the oven is easy and quick. Mom used crushed pineapple, chopped nuts and coconut in the topping. You can certainly make yours without the coconut or nuts if you prefer.

Pineapple Upside Down Cake

1 box yellow cake mix (you will mix this exactly as directed on your cake mix directions EXCEPT substitute the drained pineapple juice for water. If you don’t have quite enough pineapple juice, add water.**)

1 stick butter

1 cup light brown sugar

½ cup chopped nuts

½ – 1 cup coconut

20 oz can crushed pineapple —drain and reserve the juice **

Maraschino cherries

Directions

Put butter in 13×9 pan and melt in a 350 degree oven. Add brown sugar to melted butter.

 

 

Sprinkle nuts and then coconut over brown sugar/butter mixture.

 

 

Add drained crushed pineapple and then push down maraschino cherry halves through the pineapple.

 

 

Mix cake mix as directed, substituting the water called for with the reserved pineapple juice. If you don’t have quite enough pineapple juice, add water to get the required amount. Pour batter over pineapple mixture in pan and bake as directed on cake mix box. Check carefully—it probably will take longer than the time given on your cake mix box for a 13×9 pan, but you will want to start checking every 5 minutes until cake tests done. Be sure to check in the middle of the cake for doneness.

Remove from pan 3-5 minutes after removing from oven. If any of the topping mixture sticks when removing, just take a spoon and spread back on the cake.
