I love this vegetable casserole. It is so versatile!! I love to make it with a mixture of cauliflower, broccoli and carrots, but you can vary your veggies. It is also great with just broccoli. During the holidays when you are really busy, you can make it ahead and bake it the next day.
Company Vegetable Casserole
Frozen Broccoli, Cauliflower and Carrots (between 1 ½ lbs and 2 lbs)
1 ½ Cups (or more) Shredded Cheddar Cheese
1 Can Cream of Mushroom Soup
2/3 Cup Milk
Slivered Almonds–optional
1 Small Can French Fried Onion Rings
Cook frozen veggies in microwave until just done—do not overcook. Drain and place in a baking dish. Sprinkle with cheese. For an extra special treat sprinkle on some slivered almonds too!!
Mix together soup and milk. Pour over veggies. (continue with recipe or cover and refrigerate until ready to bake)
Bake at 350 for 25 minutes. Remove and top with French fried onions. Bake another 8 minutes. Watch carefully so onion rings do not start to burn.
This is a great recipe for family dinners, the holidays or potluck dinners. Everyone loves it! Your family will be amazed and never guess how easy it was to prepare.

You could even make this casserole with fresh vegetables rather than frozen ones….and of course fresh or frozen vegetables could be cooked on the stove top rather than the microwave.
